Ingredients

1 tablespoon coconut oil

2 tablespoons honey

splash pure vanilla extract

pinch of salt

1 egg yolk

2 tablespoons almond meal

2 tablespoons dark chocolate chips

Preparation

  1. In the mug, melt coconut oil by microwaving for about 10 seconds.
  2. Add honey, vanilla, and salt; whisk until combined.
  3. Add egg yolk and beat. Beat in almond meal and then fold in the dark chocolate chips.
  4. Cook in the microwave for 40 to 50 seconds until the cookie is puffed up.
