Ingredients
1 tablespoon coconut oil
2 tablespoons honey
splash pure vanilla extract
pinch of salt
1 egg yolk
2 tablespoons almond meal
2 tablespoons dark chocolate chips
Preparation
- In the mug, melt coconut oil by microwaving for about 10 seconds.
- Add honey, vanilla, and salt; whisk until combined.
- Add egg yolk and beat. Beat in almond meal and then fold in the dark chocolate chips.
- Cook in the microwave for 40 to 50 seconds until the cookie is puffed up.
