Ingredients
3 ounces Whole wheat spaghetti
6 ounces Shrimp (peeled and deveined)
1/2 bunch Asparagus (trimmed and sliced thin)
1/2 cup Red Pepper (thinly sliced)
1/2 cup Peas (fresh or frozen)
1 1/2 teaspoons Garlic (minced)
1/2 teaspoon Salt
3/4 cup Yogurt
2 tablespoons Parsley (chopped finely)2
1 1/2 tablespoons Lemon Juice
1 1/2 teaspoons Oilve Oil
1/4 teaspoon Black Pepper
2 tablespoons Pine Nuts (roasted in small skillet over med-high heat 2- 4 minutes.
Preparation
Bring a large pot of water to a boil. Add pasta and cook 2 minutes less than package directions.
Add shrimp, asparagus, red pepper, and peas. Cook until pasta is tender and the shrimp are cooked. 2 - 4 minutes.
Drain well.
Mix garlic and salt into a paste. Whisk in yogurt, parsley, lemon juice, oil and pepper.
Add the pasta mixture and toss to coat. Sprinkle with pine nuts.
