Ingredients

3 Shallots

.5 pounds Smoked Salmon

.5 pounds Asparagus

1/4 cup Green onions

8 ounces Plain Greek Yogurt

6 ounces Creme Fraiche

2 tablespoons Horseradish

1/4 cup Heavy Cream

1/2 cup Parmesan Cheese

2 tablespoons Lemon juice

2 tablespoons Dill

8 ounces Fresh Pasta

Preparation

  1. Chop shallots and saute in 2T olive oil

  2. Add pieces of smoked salmon and cook until no longer opaque

  3. Add slightly steamed 1-2 inch asparagus pieces and green onions

  4. Mix greek yogurt, creme fraiche and horseradish (to taste) and add to pan

  5. Thin as necessary with heavy cream

  6. Add lemon juice and parmesan

  7. Stir in salt, pepper and dill to taste

  8. Add cooked fresh pasta and 2-3 T pasta water
