Ingredients
1 pound Chicken livers
1 pound Bacon
1 cups Onion
1 tablespoon Parsley
1 teaspoon Salt
1/2 teaspoon Pepper
2 tablespoons Flour
2 pieces Eggs
Preparation
Brush 9" loaf pan w/butter and line bottom w/ 3 slices of bacon cut to size.
Cut remaining bacon into 1" strips.
Chop onion coarsely.
Simmer chicken livers, salt, pepper, bacon and parsley covered until livers are pinkish grey. Stir occasionally. Bacon should not brown.
Cool 30 minutes. Sprinkle flour over mixture. Put 1/2 in blender, add 1 egg & mix. Repeat for 2nd half.
Pour into prepared pan. Cover with 3 folds of aluminum foil w/ holes punctured in foil.
Place in larger pan filled with water. Bake @ 350 for 2 hours.
