Ingredients
1 can Chick peas, drained and rinsed
2 heads Diced roasted yams or sweet potatoes or squash
2 cups Cooked quinoa
1 head Diced peppers
2 handful Diced carrots
1 bunch Chopped cilantro
1 cup Pumpkin seeds
2 cups Coarse.y chopped spinach
1 bag Sweet kale salad mix large bag
1 bunch Arugula or other greens
1 cup EVOO
2 tablespoons Maple syrup or honey
6 tablespoon Balsamic vinegar
4 cloves Crushed garlic
2 tablespoons Dijon mustard
1 pinch S and p
Preparation
For dressing, combine everything listed from olive oil, down
Mix all other ingredients together but only a bit of the greens. Add just a bit of the dressing and toss together.
Keep extra dressing in fridge. When serving, add more greens each time and toss more dressing in.
If u can’t find sweet kale mix, it comes with sprouts, kale, chicory, dried cranberries and roasted pumpkin seeds. Throw out the dressing and still add more pumpkin seeds.
