Ingredients

1 cup brown sugar

1/2 cup butter

2 Tbsp water

1 can sliced peaches

5 eggs

1 Tbsp vanilla bean paste

1 pinch cinnamn

12 slices day-old french bread - 3/4" thick

Preparation

In a saucepan, stir together brown sugar, butter, and water. Bring to a boil, then reduce heat to low and simmer for 10 minutes, stirring frequently. Pour the brown sugar mix into a 13x9 pan, to cover the entire bottom of the pan. Drain the peaches and place them in a layer over the sugar coating, then top with the slices of french bread. In a medium bowl, whisk eggs and vanilla. Slowly pour over the bread to coat evenly. Sprinkle with cinnamon. Cover and refrigerate overnight (at least 8 hours). Remove the dish from the fridge and let sit for 30 minutes, to come to room temperature. In the meantime, pre-heat the oven to 350 degrees. Bake for 25 - 30 minutes, or until the bread is golden-brown.
