Ingredients

2 1/2 cups flour

1/2 cup white sugar

1/2 cup brown sugar

1 Tbsp baking powder

3/4 tsp salt

1/4 tsp cinnamon

1+ cup mashed banana (approx. 3)

1 cup milk

3/4 cup chunky peanut butter

1 egg

3 Tbsp oil

1 tsp vanilla

FROSTING:

4 1/2 Tbsp smooth peanut butter

3 1/2 Tbsp butter

1 1/2 cups confectioner’s sugar

1 1/2 Tbsp milk

1 1/2 tsp vanilla

Chocolate chips

Preparation

Pre-heat oven to 350 degrees. In a mixer, combine the first 6 ingredients. In a separate bowl, combine bananas, milk, peanut butter, egg, oil, and vanilla. Mix well. Add into the dry ingredients and mix well. Stir in the chocolate chips. Spoon into 2 well-greased loaf pans and bake for 45 - 50 minutes, or until set in the center. Remove from the pans and put on a wire rack to cool. When completely cool, wrap in foil and chill in the fridge for 30 minutes to overnight. To make the frosting, melt the peanut butter and butter. Remove from heat and stir in the confectioner’s sugar, milk, and vanilla. Stir well. Frost the loaves and sprinkle liberally with chocolate chips.
