Ingredients

2 T + 6 T butter

1/4 + 1/2 c sugar

2 lbs firm bartlett or anjou pears (about 3-4)

2T mince candied ginger

1/4 t nutmeg

1 c flour

2 t baking powder

1/4 t salt

1/3 cornmeal

1/2 boiling water

2 eggs

1 t vanilla

1/2 c milk

Preparation

Preheat oven to 350 In 10" c i skillet, melt 2 t butter, add 1/4 c sugar, cook until golden brown. Arrange pears in flower pattern, cook until slightly softened 5" whisk together flour b powder and salt in another large bowl, put cornmeal, add boiling water,stir, add 6 T butter and sugar mix well , beat in eggs and vanilla. Add flour mix and alternate with milk. pour over pears and bake in oven for 18" until golden. Rest for 5", unmold.
