Ingredients

600 grams cooked laksa noodle (a.k.a lai-fan or thick rice vermicelli)

450 grams aked mackerel or other oily fish (boiled, flesh out the fish and discard the bones)

1 piece onion (diced)

1/2 piece cucumber (diced)

1/4 piece pineapple (diced)

1 stalk ginger bud

some pieces mint leaves

1 packet Nyor Nyar Paste for Penang Assam Laksa

Preparation

  1. Bring 1 Litre of water to boil. Pour 1 packet of Nyor Nyar Paste for Penang Assam Laksa into the pot and stir for 1 minute.

  2. Place the mackerel flakes into the pot.

  3. Separate the cooked laksa noodle into 4 bowls.

  4. Pour the hot broth into each bowl.

  5. Garnish with the onion, cucumber, red chilli, pineapple, ginger bud and mint leaves.
