Ingredients
5 eggs, beaten until frothy
1 1/4 c vegetable oil
2 1/2 c sugar
1tbsp vanilla
3 1/2 c flour
1tsp cinnamon
1tsp nutmeg
1 tbsp baking powder
1 c toasted what germ
3 c firmly packed shredded zucchini
1 c drained crushed pineapple (20 oz can)
Preparation
Preheat oven to 350° Add oil to beaten eggs slowly, then blend in sugar and vanilla Beat until lemon colored . Add remaining ingredients (sifted) and mix well. Pour into 4 load pans that have been greased and floured. Bake for 1hr, check at 50 min
Freezes well.
