Ingredients
1 lb firm fish
Salt and pepper
Oil for frying
2 habanero peppers, seeded
1/2 red bell pepper
3 cloves garlic
1 shallot
2T fish sauce
3T sugar
1T tamarind paste
2 sprigs sweet basil
crushed pepper flakes
Preparation
Mince garlic, shallot and peppers. Sautee lightly. Add sugar, tamarind and fish sauce and cook down. Add basil and pepper flakes and reduce until thick.
Salt and pepper fish and fry. Pop into oven to crisp until ready to serve.
Serve fish drizzled generously with sauce, over rice and sautéed vegetables such as zucchini and red bell peppers.
