Ingredients
4 boneless pork chops 1/2 inch thick and trimmed of fat (5 ounces each)
1/4t salt
1/4t ground black pepper
1/4 cup chinese plum sauce or apricot jam
4t yellow mustard
Preparation
Spray a 10 inch nonstick skillet with cooking spray and place over medium high heat. Rub the pork chops with the salt and pepper and place in skillet. Cook for 3 minutes on each side until no longer pink in the center.
In a small mixing bowl mix the plum sauce and mustard. Spoon on top of the pork and serve
