rice wine vinegar

palm sugar

cinnamon stick

star anise

green cardamon pods

sweet cloves

garlic fresh

ginger root

balsamic vinegar

cider vinegar

smooth plum jam

soy sauce

and sweet soy sauce or key cap manis. red onion

Preparation

put all liquids and spices and onion into a pot bring to almost boiling, place on lid turn down heat to low and simmer for 10 mins strain out spices and onion and add into jam whisk or mix together till jam is liquid and then put on low heat and reduce by half decant and serve with pork or duck.
