Ingredients

4 cloves garlic – sliced

1/2 bunch green onions – chopped

2 tablespoons olive oil

4 each boneless chicken breasts

salt and pepper

1 tablespoon olive oil

1 each juice of lemon

Lemon Rice

2 cups water

1 cup rice

lemon pepper

butter or margarine

Preparation

Saute garlic and onions quickly in olive oil; set aside.

Flatten chicken and season. Brown in 1 tbsp olive oil in skillet. Spoon onions/garlic over chicken. Squeeze lemon juice over chicken. Add small amount of water; cover and simmer on low for 20 minutes.

Serve with lemon rice.
