Ingredients
2 c. heavy cream
1 c. fat-free organic milk (it’s creamier)
1 c. 100% pomegranate juice
1/3 c. Splenda
1/3 c. sugar
pinch salt
3/4 pints fresh strawberries
1 additional Tbls. sugar
Preparation
Whisk cream, milk, juice, sugars, and salt in a medium bowl until sugars are dissolved. Refrigerate for 2 hours or more.
Clean and dice strawberries. Place in small bowl and sprinkle with sugar. Stir and then mash with rounded side of spoon until some liquid begins to form. Let stand at room temperature until needed.
Place milk mixture in electric ice cream maker and mix for about 30 min., then add strawberries and its juices. Continue for about 10 or 15 more minutes until frozen (will be on the soft side). Freeze a little before serving if you prefer firmer ice cream.
