Ingredients
2-1/4 lbs pork tenderloin, sliced thin
1/2 cup reduced sodium soy sauce
1/4 cup fresh lime juice
2 Tbsp crunchy peanut butter
1 Tbsp curry powder
1 Tbsp brown sugar, tightly packed
2 cloves garlic, minced
1/8 tsp ground red pepper
5 cups cooked rice
Cilantro sprigs for garnish
Preparation
Thread pork slices on 8 skewers; place in rectangular glass pan. To prepare marinade, whisk soy sauce, lime juice, peanut butter, curry, sugar, garlic and pepper. Pour marinade over skewered pork. Cover and refrigerate overnight.
