Ingredients
1 Tablespoon Unsalted Butter
3 lbs. Yukon Gold Potatoes, peeled
2 Cups Half and Half
1/4 Teaspoon Cayenne Pepper
1 Teaspoon Kosher Salt
6 oz. Gruyere, shredded
Preparation
Preheat oven to 350 degrees. Butter 13" x 9" glass baking dish. Slice potatoes 1/8" thick. Heat to boiling in a large saucepan half and half, cayenne and salt. Add potatoes and cook 4-5 minutes stirring until half and half thickens. Transfer half potato mixture to prepared baking dish, evenly top with 1/2 of the cheese, repeat. Bake 45-55 minutes until golden brown. Let rest for 5-minutes before serving.
