Ingredients

2T lemon or orange juice

.5 c Applesauce

2 T butter or coconut oil + more for brushing muffin tins

2 large, Eggs or 3 small

.75 cup Yogurt

4 T Honey

1.5 t Vanilla extract

1 Bananas

.5 c Oat Flour (you can blend oats)

.5 c Cornmeal

.25 Almond Meal/flour

1.5 scoops, Protein Powder

1 t Cinnamon

1.5 t Baking Powder

.5 t Baking soda

3 t Orange or lemon Zest

1.5 c Blueberries

Preparation

Preheat oven to 400°. Place brush muffin tins with butter or oil. In a med bowl combine juice, butter/oil, eggs, yogurt, applesauce, honey, vanilla extract and mashed banana. In a second large bowl combine oatmeal flour, almond meal, vanilla whey protein powder, cinnamon, baking powder, baking soda, and zest. Combine flour mix and egg mix together until smooth. Fill each tin ¾ of the way full. Place about 8 blueberries on top spreading evenly over top of each filled muffin batter. Bake for 20 minutes. Store in the refrigerator. You can also freeze & reheat by popping in the oven at 350 for 10min.
