Ingredients

1 3 to 4 pound pork butt roast

2 tablespoons vegetable oil

1 cup soy sauce

1/2 cup brown sugar

5 or 6 cloves of garlic

1 can chipotle peppers in adobo sauce (7 ounces)

Preparation

Heat a large skillet over medium heat and add 2 tablespoons of vegetable oil. Sear roast on all sides until golden brown.

Prepare marinade by combining brown sugar, soy sauce, and garlic. If desired add can of chipotle peppers into the pressure cooker before cooking (this will make it HOT).

Place pork butt roast and marinade into slow cooker. Cook on low for about six hours or until the meat begins to flake easily when pricked with a fork.
