Ingredients

10 LBS picnic shoulder

1 bottle red wine

1 box brown sugar

7 leek stalks

1 cup smoked salt

1/2 cup vinegar

4 ounces water

Preparation

place shoulder in pan cover with water in a separate bowl mix brown sugar , vinegar, smoked salt, red wine place place leek stalks in pan pour mixture pour in water cover completely no air holes braise for 2 hours take out rest and refrigerate for 4 hours place back in oven at 350 for 4 more hours rest for 1 hour partially covered
