Ingredients
2 lbs pork tenderloin or shoulder
2 T. olive oil
1/2 C. Lime Juice
1/2 finely chopped yellow onion
1/4 C. Orange Juice
2 cloves crushed garlic
1 T. molasses
1 t. Salt
1/2 t. Pepper
1/2 t. Paprika
1.5 C. water
Preparation
Mix all ingredients but pork and oil and set aside. Preheat oven to 325. Trim fat from pork. In a dutch oven, brown pork well in oil. Add mix, cover with tight-fitting lid, and bake 2-2.5 hours. Shred meat with fork and serve.
