Ingredients

2 cups flour

1/2 teaspoon salt

1/2 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cloves

1 teaspoon cinnamon

1 teaspoon ground nutmeg

2 cups sugars

1.5 sticks butter (3/4 cup)

2 eggs

15 ounces pumpkin in can

Preparation

preheat oven to 325

grease two 8.5 x 4.5 inch loaf pans and dust with flour

combine flour, salt, baking powder, baking soda, and spices in a bowl and use a whisk to mix well

in mix master, at medium speed, beat butter and sugar until just blended. add eggs one at a time, beating well after each. continue beating until very light and fluffy, a few minutes. beat in pumpkin. the mixture might look grainy and curdles at this point – that is ok.

at low speed, beat in flour mixture until well combined.

turn batter into prepared pans, dividing evenly.

bake for 60-70 mins until tester is clean

let cool in pan for 10 min

put on wire rack to cool completely

if loaves stick use plastic knife to loosen
