Ingredients
CRUST AND TOPPING:
1 cup all purpose flour
5 Tbsp butter, room temperature
1/3 cup golden brown sugar, packed
1/2 cup chopped pecans or walnuts
1 pkg (8 oz) cream cheese, room temperature
1/2 cup pumpkin puree
1 1/2 tsp cinnamon
1 tsp ground allspice
3/4 cup sugar
2 eggs, lightly beaten
1 tsp vanilla
Preparation
CRUST AND TOPPING: Combine flour and brown sugar in a medium bowl and cut in butter to make a crumb mix. Stir in nuts and mix well. Set aside 3/4 cup of mix for topping. Press remaining crumb mix into the bottom of an 8x8 pan. Bake at 350 degrees for 15 minutes. Cool slightly. NOTE: I like to make 1 1/2 times the crust mixture and reserve 1 cup to sprinkle on the top.
FILLING:Combine cream cheese, sugar, pumpkin puree, eggs and spices in a large mixing bowl. Blend until smooth and pour over baked crust. Sprinkle with reserved crumb mix. Bake at 350 degrees for 30-35 minutes. Cool before cutting into bars.
