Ingredients

Dry Mixture:

1.5 C All Purpose Flour

1.5 C Whole Wheat Flour

1.5 T Pumpkin Pie Spice

2 t baking soda

1 t salt

Egg Mixture:

4 large eggs

2.5 C granulated sugar

15 oz pumpkin

1 C vegetable oil

0.5 C Orange Juice

2 C Cranberries (fresh or frozen)

Preparation

Add dry ingredients to egg mixture. Stir until moistened. Fold in cranberries. Spoon batter into 2 greased loaf pans. Bake until pick comes out clean, 60-65 minutes at 350° Cool in pans on wire rack for 10 minutes. Remove from pans; put on racks to cool completely.

Yield: Two 5x9 inch loaves
