Quenby S Classic Carrot Cake Recipe

Ingredients

1 and 1/4 cups vegetable oil

2 cups sugar

3 l eggs

2 cups flour

2 teaspoons Cinnamon

2 teaspoons baking soda

2 teaspoons vanilla

1 teaspoon salt

2 cups shredded carrots

1 cup walnuts or pecans

1/2 cup crushed pineapple (drained)

(grease and flour) prepare 9 x 13 cake pan or 2 9 inch cake pans - set aside

preheat oven 350 degrees

Mix together all ingredients and place in prepared cake pan

bake 50 mins. to 1 hr

frost with pineapple cream cheese frosting
