Ingredients

1 pound Ground Beef

1/2 cup Onion (diced)

1 tablespoon Garlic Powder

1 tablespoon Taco Seasoning

2 1/2 cups Macaroni

1 can Black Beans (drained and rinsed)

1 can Mexicorn (drained)

1 can Tomatoes diced with chilis

1 cup Salsa

2 cups Vegetable Broth

1 cup Queso Dip

1 cup Cheese ( mexican blend grated)

Preparation

  1. Heat pan over medium heat. Add ground beef and scramble. ( 4 - 6 minutes)

  2. Add onion, garlic, corn, tomatoes and taco seasoning. Cook and additional 3 minutes.

  3. Stir in macaroni with broth. Bring to a boil and reduce to simmer. Cover and cook for 15 minutes.

  4. Remove from heat and stir in queso dip, slasa, and shredded cheese. Cover and let sit 2 - 3 minutes.
