Ingredients

1 cup Cookie crumbs

2 tablespoon Butter, melted

1/4 teaspoon Salt

4 tablespoon Cocoa

3 tablespoon Cornstarch

4 tablespoon Sugar

1 cup Milk, whole

1 teaspoon Instant Coffee Powder

1/4 teaspoon Salt

1 teaspoon Vanilla extract

1 tablespoon Butter

2 tablespoon Liqueur / Flavouring (Optional)

Preparation

FILLING:

  1. Mix dry ingredients for filling in a medium saucepan, whisking gently to mix (no heat)

  2. Add 1/3 cup cold milk to dry ingredients, whisk well to make a smooth paste and break down all lumps. Add remaining milk a little at a time, and mix well till smooth. (No heat)

  3. Turn on heat to medium, and stir mixture gently as it heats up to prevent lumps. When it comes to a boil, lower heat and continue to stir at a boil for one minute. Then turn off heat and move pan off.

  4. Add butter, vanilla, and liqueur/flavouring if using. Beat mixture for 1-2 minutes until glossy and cooling down.

  5. Pour filling into crust, tap gently to release any bubbles, and smooth top. Return to fridge to set.

CRUST:

  1. MIx melted butter, cookie crumbs, and salt. Press well into a shallow 8" tart pan.

  2. Put into fridge to set while the filling is prepared
