Ingredients
1 cup Onion
.5 Jalapeño
1 cup Corn
1 can Black Beans
1 can Fire roasted diced tomatoes
.75 cup Quinoa
1 teaspoon Chili powder
.5 teaspoons Cumin
1 cup Vegetable broth
1 wedges Avocado
1/2 wedges Lime juice
.25 pinches Cilantro
1 tablespoons Olive oil
Preparation
Add onions and jalapeños to olive oil and stir
Add corn, black beans, tomatoes, quinoa, chili powder, cumin, vegetable broth and simmer on medium/low for -0 minutes
Spoon into bowl and top with avocado wedges, cilanteo and a juice of lime
