Ingredients

1/2 cup Quinoa or Brown Rice

1/4 cup Lemon Juice

1/2 cup Olive Oil

3 cloves Garlic

4 stalks Carrots

1/2 teaspoon Oregano

1 1/2 tablespoons Rock Salt

1/4 teaspoon Pepper

1 can Chickpeas Drained and Rinsed

2 cups Red Cabbage (Optional)

2 tablespoons Green Onions or Scallions (Optional)

1/2 cup Cilantro

Preparation

Combine all ingredients and mix well.

Refrigerate for 1 hour.
