Ingredients
1 cup mixed plain, red quinoa
1/2 chopped red pepper
1 cup shelled edamame
1/2 onion, diced
1/4 cup dried tart cherries
vinaigrette:
4 tbl olive oil
4 tbl white wine vinegar
1 tbl dijon mustard
pinch sugar-to taste
2 tbl sunflower seeds
spinach, arugula and/or watercress (gently sauteed) optional
Preparation
cook quinoa, let it cool toss with other ingredients whisk vinaigrette ingredients pour over quinoa/edamame
