Ingredients
4 bell peppers cut in halves
1 cup cooked quinoa
1 can black beans
1 can diced tomatoes
1 can corn
1 small yellow onion
1 clove garlic
Low sodium taco seasoning
1 Lime
Preparation
I just browned the onion & minced garlic.. Mixed that in with the cooked quinoa & other veggies & seasoning. Oiled the pan and placed the peppers in it, then filled them up with the quinoa mixture. I squeezed lime juice of 1/2 lime over top & Baked for 25-30 minutes at 350 degrees.
When finished I topped with greek yogurt and decided to skip the cheese.
