Ingredients

2 cups quinoa

4 cups water

1/2 cup olive oil

3 teaspoons salt

4 cups minced parsley

1 cup minced mint

6 medium tomatoes, seeded and diced

2 large lemons juiced

1 teaspoon black pepper

6 green onions finely chopped

Preparation

Combine quinoa and water in a pot. Bring to a boil. Reduce heat, cover and simmer until water is absorbed (about 15 minutes).

Chill the quinoa for about an hour.

Add all remaining ingredients.

Chill for at least 1 hour.
