Ingredients

2 cups quinoa

salt and pepper

3 T olive oil

1.5 T fresh lemon juice

8T pomegranate seeds

3T salted pistachios

3 scallions

1 orange, sliced into rounds

Preparation

Rinse quinoa in cold water to reduce bitterness Bring 4C salted water to boil. Add quinoa, reduce heat to low, cover and simmer for 15-20 min. Dress with olive oil and lemon juice, season with salt & pepper, set aside to cool. Gently mix pom seeds, pistachios, and scallions into quinoa. Taste and adjust with S&P. Serve on bed of oranges (or not).
