Ingredients
2 pounds rack of lamb chops
1/4 c. chopped fresh mint
1/4 c. chopped fresh cilantro
2 clove garlic pressed
2 T. lemon juice
2 T. oil
1 T. cumin
1 1/2 t. dried coriander
1 1/2 t. paprika
1/2 t. dried ginger
1/2 t. turmeric
1/4 t. smoked paprika
1 1/2 t. salt
1/4 t. pepper
Preparation
Mix together all ingredients and then marinate overnight. Grill to medium rare. Absolutely delicious. Serve with Emeril’s saffron rice and an eggplant dish. PS. I prefer making rice with basmati over arborio. Not so rich.
