Ingredients

4 cups ricotta cheese

1/2 cup sugar

2 cups half and half

1/2 cup sugar

6 green cardamom pods, peeled

1/3 cup pistachio nuts, double peeled and chopped

Preparation

Mix ricotta cheese and sugar. Spread in a 13 x 2 x 9" pyrex dish. Bake at 350 degrees for 35 minutes. Don’t overbake. It will set like pudding. Cool and cut into squares but leave in baking dish. Boil the half and half with the sugar and cardamom pieces for five minutes. Pour carefully over the cheese mixture. Sprinkle with pistachio nuts. Refrigerate and serve chilled. Improves with age.
