Ingredients
1 tablespoon Olive Oil
1 pound Andouille Sausage
1 Onion {diced}
1 Bell Pepper [chopped]
3 stalks Celery [chopped]
2 teaspoons Garlic [minced]
2 teaspoons Cayenne Pepper
2 sprigs Thyme [fresh]
2 teaspoons Hot Sauce
1 teaspoon Oregano
1 can Red Beans [ 16 oz rinsed and drained]
1/4 teaspoon Salt
1/8 teaspoon Pepper
1 cup White Rice [uncooked]
3 stalks Scallions [sliced]
Preparation
In a medium pot over medium heat, heat oil. Cook sausage until slightly browned. Add onion, bell pepper, and celery and cook until slightly softened, about 4 minutes. Add garlic and cook until fragrant. Add cayenne, thyme, hot sauce, oregano and beans and stir until fully incorporated. Simmer for 10 minutes, until beans are fully heated, then season with salt and pepper
Spoon over rice and garnish with green onions. Serve.
