Ingredients
1 cup red quinoa, cooked in 1 cup chicken broth/1 cup water
1/2 yellow bell pepper, diced
1 avocado, diced
1/4 not packed loose mint leaves (probably half that if it’s packed)
1/4 cup goat milk feta cheese
Optional: Juice from 1 lemon or 1 lime
salt and pepper to taste.
Preparation
Cook quinoa until done with the half and half broth and water. While it cooks, chop the other ingredients. Mix it all together. I mixed all the ingredients together while the quinoa was still pretty warm… not a special cooking technique, just lack of time…. but I think that helped meld the flavors together in the end.
