Ingredients
4 cups diced rhubarb
1 T water
1-1/2 t baking powder
1 cup sugar (2 cups if rhubarb is tart)
1/4 cup sugar
1/2 cup milk
2 T butter
1 egg, well beaten
1 cup gluten free flour
1/2 t salt
Preparation
Mix rhubarb, 1 cup sugar and water - let stand while preparing batter. Cream butter and 1/4 cup sugar together thoroughly, add the beaten egg and mix well. Sift the dry ingredients together and add alternately with the milk. Beat thoroughly. Put rhubarb mixture into buttered baking dish, pour batter over the mixture and bake at 350F for 40-60 minutes.
