Ingredients
1 onion, large, small dice
1 poblano pepper, small dice
2 stalks celery, thin slice
4 tablespoons olive oil
4 tablespoons cajun seasoning
1 tablespoon majoram
1 tablespoon sage
1 tablespoon thyme
1 pound andouille sausage, cut in 1/2" pieces
1 can diced tomatoes
3 cans red kidney beans
4 cups water
2 cups rice
Preparation
Heat 3-4 tablespoons of olive oil in a 6 quart pot over high heat. Saute the onion, pepper, and celery until tender. Stir in cajun seasoning, marjoram, sage, and thyme. (Add more olive oil if necessary.)
Add the sausage and heat through, allowing some pieces to brown.
Stir in the tomatoes and kidney beans. Once the juices from the tomatoes start to boil, add 4 cups cold water.
Bring to a boil. Add rice. Lower heat to simmer.
Simmer for 20 minutes or until rice is tender.
Adjust seasonings to taste and serve.
