Ingredients
1 Onion (large), diced small
1 Poblano Pepper, diced small
2 stalks Celery, sliced thin
3 tablespoons Olive Oil
1 pound Andouille sausage, cut into 1/2" pieces
1 can Diced Tomatoes
3 cans Red Kidney Beans
4 tablespoons Cajun Seasoning
1 tablespoon Marjoram
1 tablespoon Rubbed Sage
1 tablespoon Thyme
2 cups Rice
Preparation
In a 6-quart pot, sautee Onion, Celery, and Pepper until tender.
Stir in Cajun Seasoning and herbs (Marjoram, Sage, and Thyme). Add more oil if necessary.
Add Sausage and saute until sausage starts to brown.
Stir in Tomatoes and Red Beans. Allow to come to a boil.
Add approximately 4 cups of water and bring to boil.
Add 2 cups to 1 lb rice.
Reduce heat to simmer.
Stir frequently to prevent the rice from sticking.
Add more water if necessary.
Simmer for 20 minutes or until rice is tender.
