Ingredients
1 14-oz can of navy beans, drained and rinsed
1 large garlic bulb
1/2 c ricotta cheese
4 T extra-virgin olive oil
2 t fresh thyme
Juice of 1/2 lemon
1/4 t salt
Preparation
Heat oven to 375F. Slice off top of garlic bulb, drizzle cloves with 1 T olive oil, wrap in aluminum foil. Bake for 35 min, let cool, then squeeze garlic pulp into food processor with beans and other ingredients. Blend until smooth.
