Ingredients

3 zucchini (1.5 lbs)

1 onion

2 Tbsp olive oil

1 tsp dried thyme or 1 Tbsp fresh

1/2 tsp salt

pepper to taste

Preparation

Quarter and cut zucchini into 1.5 inch chunks; thinly slice onion. Toss with remaining ingredients on a foil lined rimmed baking sheet. Roast at 425 degrees for 30-40 minutes, tossing halfway through.
