Ingredients

5 pounds Beef Rib Roast

balsamic vinegar for brushing

Herb Paste

2 tablespoons garlic – minced

2 TBL fresh thyme (or 2 tsp dried) – chopped

1 TBL fresh rosemary (or 1 tsp dried) – chopped

2 TBL salt

1 TBL olive oil

Preparation

Preheat oven to 450*F. Place roast fat side up on a rack in a shallow roasting pan. Brush entire surface of roast with balsamic vinegar.

Combine garlic, thyme, rosemary, salt, ad olive oil to make paste. Coat top, ends and sides of roast with herb paste.

Place roast in oven and roast for 15 minutes. Reduce heat to 350*F and continue roasting for 45-60 minutes for rare.

Remove from oven and allow to stand for 5-10 minutes before slicing.
