Ingredients

1 12-oz box vanilla wafer cookies

2 cups pecans

1/2 cup dark rum

1/2 cup honey

confectioner’s sugar

Preparation

Grind cookies and pecans finely. Combine in bowl with rum and honey until thoroughly blended. Cover and let stand 30 minutes.

Using your hands, knead a heaping teaspoon of mixture until soft and ingredients stick together. Form into a ball. Roll in confectioner’s sugar. (If you freeze them, do not dust with sugar until they are defrosted.)

Place in individual candy-sized paper cups and store in airtight container. May need to be dusted with additional confectioner’s sugar.
