Ingredients

4 Roma Tomatoes, halved lengthwise

2 tbl olive oil

3 garlic cloves, minced

Kosher salt

Freshly ground pepper

1 1/4 cup ketchup

6 tbl prepared horseradish

1/4 cup tomato jam

2 tbl fresh lemon juice

Preparation

  1. Preheat grill to 450 degrees (high heat).
  2. Toss tomatoes with olive oil, garlic, 1/2 tsp salt & 1/2 tsp pepper.
  3. Place tomatoes, skin side down, on lightly oiled rack. Cook, covered, about 10 minutes or until softened & slightly charred. Remove from grill; let cool. Dice tomatoes; set aside.
  4. Stir together ketchup, next 3 ingredients & reserved tomatoes; season with salt & pepper.
  5. Cover and chill at least 2 hours or up to 3 days.
