Ingredients

4 strips of bacon, cooked, save fat

1/4 c. minced onion

1 egg

1/2 c. mayo

2 tsp. mustard

1/2 tsp. sugar

zest of half a lemon

14 oz. canned salmon

1 cooked potato, peeled and fluffed

1/4 c. breadcrumbs

2 Tbsp. parmesan

black pepper/old bay

vegetable oil

Preparation

Heat bacon fat. Add in onions. Put in large bowl after cooked. In bowl of onion, add crumbled bacon, egg, mayo, mustard, sugar, and zest. Stir. Add salmon, potato, crumbs, parmesan, and pepper/old bay. Form about 12 patties. Heat oil over medium heat, fry 5 minutes per side.
