Ingredients
16 ounces salmon, canned or smoked – drained & flaked, removing bones/skin
1 tablespoon lemon juice
8 ounces cream cheese – softened
1 teaspoon prepared horseradish
2 teaspoons grated onion
1/4 tsp liquid smoke (if using canned salmon)
chopped parsley
salt and pepper
1/2 cup pecans (for log) – chopped
8 ounces almonds, whole (for fish shape)
Preparation
Combine all ingredients except nuts. Mix thoroughly. Chill.
Either shape into log and roll in pecans and additional parsley. Or shape into a fish and cover with almonds to look like scales.
Serve with crackers and/or sliced cucumbers.
