Ingredients

2 peaches or mangoes, diced

1 lg tomato, diced

4 scallions, chopped

2 tbsp cilantro, chopped

2 tsp fresh ginger, minced

1 tbsp balsamic vinegar

Juice of 1 lemon

4 salmon stakes, 6 oz. ea

Preparation

  1. In a bowm, mox first 6 ingredients for salsa.
  2. Heat grill and spray with vegetable spray.
  3. Sprinkle with lemon juice. Grill 5-6 mins on each side.
  4. Top with salsa.
