Ingredients
32 ounces Salmon
1 Red Bell pepper
1 Orange Bell pepper
1 Red onion
2 tablespoons Shalots
1.5 cups Celery
3 Mangos cubed
1 cup Pineapple cubed
1 cup Orange juice
1 tablespoon Vinegar
1 teaspoon Salt
1 teaspoon Garlic powder
2 tablespoons Olive oil
4 cups Orzo pasta-cooked
4 cups Kashi 7grain rice
1 teaspoon Capers
Preparation
Chop celery, peppers, shalots and pan fry in olive oil
Cube mangos then puree in blender with orange juice, pineapple, vinegar, salt.
cook rice and orzo
Combine all in a wok and simmer for about 10 minutes
