Ingredients
150g Kale
150g Smoked Pancetta or 4 Rashers of Smoked Bacon, Chopped
10g Pine Nuts
Parmesan
1 Large Garlic Clove chopped or grated
1 Lemon
Fresh Thyme
Preparation
Start by cooking the pancetta until cooked and nicely golden. Start toasting the pine nuts in a separate pan, Add the garlic and cook for a minute. Remove the leaves from the fresh thyme and add. Add a splash of water, deglaze the garlic and bacon flavours stuck to the pan and add the kale. Cover and let steam for 3 minutes then remove the cover and cook for another 3 minutes. Squeeze over the juice of 1/4 of a lemon and season with some pepper. Serve the Kale with a good grating of parmesan on top and enjoy.
